Ingredients

Base:

  • 250 g chocolate biscuits
  • 125 g butter

Filling:

  • 125 ml boiling water
  • 1 tablespoon gelatin
  • 180 g sugar
  • 1 tablespoon lemon juice
  • 250 g cream cheese
  • 300 ml cream
  • 1 mint crisp chocolate bar
  • 30 ml Baileys Irish Cream
  • 60 ml Brown Crème de Cacao (Chocolate Liqueur)
  • 45 ml Crème de Menthe (Mint Liqueur)

Instructions

  • Finely crush biscuits; combine with butter. Press into a springform pan; chill to set.
  • Dissolve gelatin in boiling water. Mix sugar, lemon juice, cream cheese, and cream until smooth. Add gelatin, Baileys, and Brown Crème de Cacao; divide in two.
  • Stir crumbled mint chocolate into the first half; pour over base. Chill slightly.
  • Blend second half with Crème de Menthe; pour over the first layer. Chill to set.
  • Garnish with additional mint chocolate before serving.
