Method
- Toss wings in rub. Rest 20 minutes.
- Blend mango, deseeded habanero, lime, honey, vinegar, and rub until smooth. Simmer 5 minutes to thicken.
- Grill wings at 190°C (375°F) on indirect heat for 45-60 minutes, flipping halfway.
- In the last 5 minutes, brush with glaze. Flip. Brush again.
- Plate with extra sauce on the side. Lime wedge garnish.

Notes
Heat ladder. Half a habanero = approachable. Whole one = challenging. Two = poor life choices.
Mango ripeness. The mango must be fully ripe — soft, fragrant. Underripe gives the sauce a flat, vegetable taste.
