Important note: deseed the habanero unless you have a specific point to prove. The seeds are where most of the heat lives. The flesh has plenty without them.

Sweet mango glaze meets habanero heat. Wings that punch you in the taste buds while wearing a Hawaiian shirt.

Ingredients
 

  • 1 kg chicken wings
Rub
  • 2 tbsp all-purpose rub
Sauce
  • 2 ripe mangoes peeled and sliced
  • 1 habanero pepper deseeded
  • 1 lime juice only
  • 1/4 cup honey 60 ml
  • 2 tbsp apple cider vinegar
  • 1 tsp all-purpose rub for sauce

Instructions
 

Method
  1. Toss wings in rub. Rest 20 minutes.
  2. Blend mango, deseeded habanero, lime, honey, vinegar, and rub until smooth. Simmer 5 minutes to thicken.
  3. Grill wings at 190°C (375°F) on indirect heat for 45-60 minutes, flipping halfway.
  4. In the last 5 minutes, brush with glaze. Flip. Brush again.
  5. Plate with extra sauce on the side. Lime wedge garnish.

Notes

Heat ladder. Half a habanero = approachable. Whole one = challenging. Two = poor life choices.
Mango ripeness. The mango must be fully ripe — soft, fragrant. Underripe gives the sauce a flat, vegetable taste.
