Lemon Garlic Wings

Light, zesty lemon-garlic-butter wings finished with shaved Parmesan. The wing for people who claim they don't like wings.

Ingredients
 

  • 1 kg chicken wings
Rub
  • 2 tbsp lemon-pepper seasoning
Sauce
  • 125 g unsalted butter
  • 1 tbsp minced garlic
  • 2 tbsp honey
  • 1 lemon juice + zest
Topping
  • shredded Parmesan and chopped parsley

Instructions
 

Method
  1. Toss wings in lemon-pepper seasoning. Rest 15 minutes.
  2. Grill at 190°C (375°F) on indirect heat for 45-60 minutes, flipping halfway.
  3. Melt butter, add minced garlic, cook 1 minute. Stir in honey and lemon juice. Simmer briefly.
  4. Toss hot wings in the lemon-garlic butter.
  5. Plate, top with Parmesan, parsley, and a sprinkle of lemon zest.

Notes

Fresh lemon only. Bottled lemon juice tastes like sadness in this. Not negotiable.
Halve the butter if you want them lighter still. Replace with olive oil. Loses some richness, gains some Mediterranean.
